BBQ SHISH KABOBS

For stew meat or round steak

Prep Time: 20 minutes | Cook Time: 9 - 12 minutes

Serve with rice or quinoa


 

Ingredients

 
 
  • 2 bell peppers

  • 2 zucchini

  • 10 small mushrooms

  • 1 - 2lbs stew beef or tenderized round steak

  • 10 - 15 metal skewers

  • 1 large onion

  • olive oil (for drizzling & cooking)

For the Marinade:

  • 2 TBSP worcestershire sauce

  • 2 TBSP balsamic vinegar

  • salt and pepper to taste

  • 2 garlic cloves

  • 1 TSP onion powder

  • 3 TBSP soy sauce


 

Instructions

 
  1. Prepare the marinade in a bowl or plastic bag

  2. Chop beef into 1 inch pieces and marinade for at least 30 minutes

  3. Chop vegetables into 2 inch pieces

  4. Saving the marinade, assemble skewers with beef and vegetables, leaving a few inches of space on either end. Pour the remaining marinade over the skewers.

  5. Barbecue the skewers over high heat, 3-6 minutes per side.

  6. Let rest for 5 minutes after cooking

  7. Serve with a side of rice or quinoa
