BBQ SHISH KABOBS
For stew meat or round steak
Prep Time: 20 minutes | Cook Time: 9 - 12 minutes
Serve with rice or quinoa
Ingredients
2 bell peppers
2 zucchini
10 small mushrooms
1 - 2lbs stew beef or tenderized round steak
10 - 15 metal skewers
1 large onion
olive oil (for drizzling & cooking)
For the Marinade:
2 TBSP worcestershire sauce
2 TBSP balsamic vinegar
salt and pepper to taste
2 garlic cloves
1 TSP onion powder
3 TBSP soy sauce
Instructions
Prepare the marinade in a bowl or plastic bag
Chop beef into 1 inch pieces and marinade for at least 30 minutes
Chop vegetables into 2 inch pieces
Saving the marinade, assemble skewers with beef and vegetables, leaving a few inches of space on either end. Pour the remaining marinade over the skewers.
Barbecue the skewers over high heat, 3-6 minutes per side.
Let rest for 5 minutes after cooking
Serve with a side of rice or quinoa
