Rancher’s Pie

RLCB 2 lbs. GROUND BEEF

Ingredients

 

MASHED POTATO TOPPING:

  • 6-8 large potatoes, peeled and chopped

  • 2 TBSP cream cheese (optional)

  • 1/2 TSP paprika

  • 1 cup half & half or cream
    (DF: 1 cup full fat coconut milk)

  • salt & pepper to taste

  • 2 TBSP olive oil

  • 2 LBS RLCB ground beef

  • 1 medium onion, diced

  • 2 fresh garlic cloves, chopped

  • 2 - 15oz cans cream corn
    (DF: drained kernel corn)

  • 1 TSP oregano


 

Instructions

 
  1. 1 Preheat the oven to 375°F. You will need a round ceramic or glass baking dish (at least 5” deep) or a 9 X 13” glass baking dish.

  2. In a frying pan, heat olive oil, onion and garlic until tender.  Add ground beef and brown. Add pepper to taste and oregano. Mix the 2 cans of corn into the ground beef mixture and set aside.

Mashed Potatoes:

  1. Place the potatoes in an instant pot with 1 cup water and cook on high for 30 minutes (if using a  stove top instead, boil potatoes in water until soft). Mash the potatoes, adding 1 cup half & half, cream, or milk alternative. Add cream cheese if desired. Mash until potato mixture is smooth.

  2. Transfer the ground beef mixture into the baking dish and spread the mashed potatoes evenly on top. Sprinkle the top with paprika.

  3. Bake in the oven for 30 minutes or until bubbly. Serve with a green salad and roasted carrots.
