The perfect Spring meal

The Heritage Dinner Roast is the perfect recipe for an elegant meal while entertaining. It pairs nicely with the 2016 Laurel Glen Vineyard Estate Cabernet. You can serve this recipe with mashed or roasted potatoes, fresh bread and a green salad.


Recipe for RLCB chuck, rib, or pikes peak roast

Prep Time: 25 minutes | Cook Time: 3 - 4 hours

Ingredients

 
  • 5 carrots, cut into 3” pieces

  • 4 Yukon potatoes, cut into 3” pieces

  • 4-5 cups beef broth

  • 3/4 cup red wine

  • thyme - 3 sprigs or 1 Tbsp dried

  • rosemary - 3 sprigs or 1 Tbsp dried

  • 2-3 Tbsp. olive oil

  • 3.5 - 5 pound chuck, english rib, or pikes peak roast

  • salt and pepper for meat rub

  • 2 onions, chopped into 1” pieces

  • 2 fresh garlic cloves, minced

  1. Preheat the oven to 275ºF

  2. In a large Dutch oven, heat 2 Tbsp. olive oil, onion and garlic until slightly browned. Remove from pot and set aside.

  3. Rub salt and pepper onto both sides of the roast until covered. Add more

    olive oil to the pot if necessary and turn the stovetop to high. Sear both sides of the roast, about 2 minutes per side.

  4. Remove the roast and set aside. Add carrots to the pot and brown slightly.

    Add 1 cup of beef broth to the pot and scrape the browned particles in the

    bottom of the pot with a wooden spoon. These are called fond.

  5. Add half of the remaining vegetables to the pot, and then add the roast. Fill in the remaining vegetables around it. Pour in the wine and remaining broth until the roast is covered. Add the herbs and stir the mixture.

  6. Cover the roast and place it in the oven for 3 to 3.5 hours for a 3-4 pound roast and about 4 to 4.5 hours for a 4-5 pound roast.

  7. Remove from the oven, transfer the meat to a platter and place the cooked vegetables around it. Slice the meat against the grain and serve with a glass of the 2016 Estate Cabernet for a delightful meal!
